Chili Contest.......

Yes, it's finally Friday...yippee! A lot going on this weekend....Going to see 'New Moon', some golfing if the weather is nice and I'm entering a chili cookoff tomorrow at our golf club....so wish me luck. Here is the winning batch (I hope!) being served with some Oikos Plain Yogurt courtesy of Kristina at Stonyfield Farm....I love their yogurt.....thank you to both of them. Two years ago, when I entered I won and they presented me with $20.00, the winning pot!

Here is the recipe I used and it is from Nancy Lopez LPGA World Hall of Famer.

Turkey Chili

1 tablespoon olive oil
1 cup chopped sweet onions
1 tablespoon minced garlic
1/4 cup chopped yellow bell peppers
1 pound ground turkey
1 (28-ounce) can crushed
organic tomatoes, undrained
1 (16-ounce) can red kidney beans, drained and rinsed
1 tablespoon chili powder
1 tablespoon
sugar
2 cups low-sodium chicken stock
1/2 teaspoon garlic powder
1 teaspoon hot sauce (recommended: Tabasco)
11/2 teaspoons sea salt
1 teaspoon dried basil
1/2 teaspoon dried oregano

In a large skillet, saute onions, garlic and bell peppers in olive oil over medium heat until onions are translucent. Add ground turkey and cook until browned.
Add remaining ingredients and stir well to combine. Reduce heat to low and simmer for 1 hour, stirring occasionally.


Here are some Peanut Butter Candy Bars that we are taking for dessert.

Here is the recipe:

1 pouch (1 lb 1.5 oz) Betty Crocker® peanut butter cookie mix
3 tablespoons vegetable oil
1 tablespoon water
1 egg
1 cup chocolate chips
1 cup butterscotch chips

1. Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
2. In large bowl, stir cookie mix, oil, water and egg until soft dough forms. Press into pan. Bake 15 to 18 minutes or until edges are light golden brown. Cool 10 minutes.
3. In small microwavable bowl, microwave chocolate chips and butterscotch chips on High 1 to 1 1/2 minutes or until melted. Spread evenly over base. Refrigerate 30 minutes or until set. For bars, cut into 9 rows by 4 rows.

TJ's Pumpkin Muffin Mix.....

Good morning Blog World.....how are ya? Me...I'm doing great! Starting to take golf up again, so that Cliff and I can do that little hobby together! Yesterday I made the mix that I won from Jess @ www.afeteforfood.com. YUM-O! is all I can say....lol!! Just to let gluten free peeps know...these are not gluten free! I changed the mix up a little bit. I didn't use the oil that it called for....I replaced it with unsweetened applesauce. The kitchen smelled so good with the muffins baking and even when I was mixing it up...smelled great! I LUV Trader Joe's and a BIG thank you to Jess again!

Product Review...GF Pancakes...YUM!.....

Top of the morn'in to ya! Hope you are having a fab morning so far! I wanted to do a product review on Gluten Free Pantry Brown Rice Mix...We made pancakes as you can see, they were so light and fluffy....just the way Cliff and I like them....no heavy pancakes for us...he he! The flavor from the brown rice was very delicate and flavorful! I also like that in the package you can make pancakes/waffles two times, it's not just a one time affair..lol!!

For Your Viewing Pleasure......

Happy Friday the 13th to ya! Awe, now don't be fearful....he he!....it's just another day! I was almost born on a Friday the 13th, but it was a Thursday instead and I turned out okay...lol!! Yesterday I also received this little cookie booklet in the mail and I didn't even order it....that is SO much fun when this happens! So enjoy the few photo's I took and don't drool on the keyboard....he he!









Now get out there and enjoy the day! Have any weekend plans? We are going to see '2012' movie this weekend and I believe today we are going to the golf range and I may even hit a few...lol!! Oh BOY! Have Fun!

Oikos, Crustless Coconut Pie and Some Brownies....

Good afternoon fellow foodies! Hope all is going well! A few weeks ago I was contacted by Kristina at Stonyfield Farms wanting to know if I wanted to try their greek yogurt...well, you know what I said in an excited voice....Yes!, Yes!, Yes!....So this is what she sent me. Crustless Coconut Pie from Shirley @ www.glutenfreeeasily.com! Thank you Shirley! This is so good and easy to make! The bottom is like custard...which I LUV! The photo I took doesn't do it justice...lol! Will have to make again and take a better photo...he he! If you go to Shirley's site...there is a better photo! Here is the recipe:

Crustless Coconut Pie(Click here for a print version of this recipe.)

3 large (or extra large) eggs
1 ½ cups granulated sugar (I cut sugar in half and used Florida Crystals Natural Cane Sugar)
¼ cup plus 1 tbsp flour* (1/3 cup all purpose gluten free flour)
1 cup milk (I used almond milk)
½ cup butter, melted
1 tsp vanilla
1 tsp apple cider vinegar (omitted)
1 ½ cup coconut flakes

Preheat oven to 350 degrees Fahrenheit.

Beat eggs and sugar. Add flour, milk, butter, vanilla, and vinegar; mix well. Stir in coconut and pour into greased pie pan. Bake until the top is golden and the filling is set in the center, about 45 minutes. Serve at room temperature. Store any leftovers in your refrigerator.

Shirley's notes *I use my all-purpose gluten-free flour mix, but you can use whichever flour you prefer for baked goods. (If you are not gluten free, use your “standard” all-purpose flour.) My gluten-free flour mix is 3 parts Asian white rice flour and 2 parts cornstarch. I gently mix three one-lb bags of the Asian white rice flour and two one-lb boxes of cornstarch in a very large bowl and then store the mix in several airtight containers (like glass jars or Tupperware). No refrigeration is needed.

More of Shirley’s notes: This is the pie recipe exactly as I make it. (I simply adapted a recipe I had used for years to be crustless and gluten free by replacing the flour in the recipe with gluten-free flour and adding 1/4 cup gluten-free flour.) However, many of my friends and support group members have adapted this recipe to fit their own dietary needs. Some friends cut back on the butter. Another makes this pie dairy free by replacing the milk with rice milk and using Earth Balance (again, in a lesser amount) instead of butter. She also cuts the sugar in half, increases the gf flour to 1/3 cup, and omits the vinegar. So please don’t be shy about adjusting this recipe slightly. I plan to be trying out some new adjustments to this recipe myself over the holiday season. I’d like to make it using coconut oil versus butter and coconut milk instead of the cow’s milk.

The other evening we went to see some of our friends and I took the pie and made some brownies too! I added 1/2 cup of pecans to these....yummy!

Samples.......

Happy Tuesday to ya! Cloudy here today.....hope someone is receiving a sunny day....lol!! I would like to thank you all for such nice and wonderful comments that you leave me....I really appreciate it! The other day I also received a sample package from Nature Valley, I seen an ad on TV that you could go to their website and get a free sample...so I did! This is what I received and they also had a new flavor of bar....cranberry & pomegranate.....it was really good....the flavor combo worked very well together.
